Culinary Institute of America 7-Ply Clad Copper Saucier with Lid Product Description:

  • 2 Quart Saucier With Cover 18-10 SS Cooking Surface Nonreactive Magnetic SS Exterior for all Cooking Surfaces Including Induction Pure Copper Center

Product Description

A saucier is considered a much more versatile kitchen tool than a regular straight- sided saucepan. This pan is perfectly suited for any water based cooking you might do in a straight-sided pan, but offers the additional feature of being the ideal shape for sauces, or candy making. The gently sloping sides keep any food from accumulating in the corners and keep your delicate sauces or candies from scorching. An ideal pan available in 3 versatile sizes, 1Qt., 2Qt., and 3Qt. Designed by the Master Chefs of the esteemed Culinary Institute of America to be the top performing cookware on the market, the Master’s Collection features the perfect amount of copper, surrounded by layers of aluminum and stainless steel. Each layer of metal extends to the top of the pan. This high quality construction makes for an amazingly responsive and conductive piece of kitchen equipment. The detail to design and functionality are exceptional, and will be a welcome addition to your kitchen.

5Nice piece of cookware
By John Haynes
First let me say that I have an induction cook top, so I am limited to magnetic cooking materials. I tend to get bored having all of one brand, so my armamentarium is a hodge-podge of several brands including All-Clad SS, LeCreuset (both SS and enameled cast iron), Emerilware (both the tri-ply clad and the regular SS with the clad bottom), and plain old Lodge cast iron. The CIA Masters Collection 2 quart saucier is perhaps my favorite. It has a nice heft, but is not too heavy, looks great, and has a great handle. The lid is a little nicer than the All-Clad as well. I only have this one piece, but suspect I will end up with more, as that handle beats the pants off of the All-Clad SS (the predominant player in my collection), and otherwise performs comparably to the All-Clad SS, which I consider the standard for comparison for SS cookware. Also I find it more aesthetically pleasing than any of the brands that I mention above, which is a plus in my book, although it has absolutely nothing to do with cooking.Used it to make a Fleur de Sel Caramel sauce tonight and it performed excellently. My new favorite pan. Certainly not cheap, but pretty much comparable in price to All-Clad and less than say Viking. Anyway, if you don't mind paying for premium cookware, you won't go wrong with this piece, and I suspect anything in their line.

5Worth the money
By LaLa
I have been replacing my old outdated cookware with quality pieces. This is the most beautiful and well made saucier I have ever seen. It is a joy to use, and is lovely on my stove. I'll be buying more of the CIA line as my budget permits. If you love to cook, treat yourself to this saucier.

5Perfect
By Emma Hardesty
The 2-qt version of this saucier became a favorite within days--the size is ample for polenta, risotto, aloo gobi, poaching marinated tofu, and Gordon Ramsay's fabulous Broccoli Soup--for making portions for one to four people. The lid is just heavy enough to be effective; the pan cleans like a dream, and it will probably last as long as I do.
